205Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: A carton of Half & half was being stored on the counter at room temperature. Half & half is a potentially hazardous dairy product that must be stored below 4°C to prevent the growth of harmful bacteria.
Corrective Action: Ensure that all potentially hazardous foods are stored below 4°C. If a potentially hazadous food has been stored above 4°C for longer than 6 hours or above 20°C for 2 hours, discard the product immediately.
302Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Avmor EP50 Ecopure hydrogen peroxide based disinfectant was being used on direct food contact surfaces such as the deli slicer. Proper usage of this disinfectant requires a contact time of 5 minutes and potable water rinse afterwards, thus making it improper for a food premise.
Corrective Action: Switch to a food grade surface sanitizer that does not require a rinse step. Some approved sanitizers include a 200 ppm chlorine solution made with 1 tsp unscented bleach to 4 cups of water (1:250 ratio) or a 200 ppm Quaternary Ammonium Compound (also known as QAC or QUAT).
