303Critical Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Utensils were being dried on top of towels on the counter by the dishwasher. Utensils need to be air dried after sanitizing. Towel-drying may lead to re-contamination of the cleaned and sanitized utensils.
Corrective Action: Air dry utensils on an impermeable surface that is smooth, non-porous and easy to clean and sanitize (e.g. a plastic or stainless steel drying rack).
401Critical Adequate handwashing stations not available for employees [s. 21(4)]
Observation: The kitchen has a two-compartment sink and a commercial dishwasher available for washing utensils, but there is no a dedicated handwashing station. The Food Premises Regulation requires that the "operator of [a] food premises must supply and maintain handwashing stations adequate in number and location to ensure convenient access to all employees".
Corrective Action: Either install a conveniently located hand washing sink (i.e. in the same room, where food preparation is performed), or install a third sink compartment. If a third sink compartment is installed, the middle compartment will need to be kept empty so that food handlers can wash their hands here after any activity or instance where their hands may become contaminated.
