Observation: Cooked deep fried pork is being cooled in cardboard containers that previously contained raw pork.
Corrective Action: Cool cooked items in food grade containers to prevent cross contamination of foods.
108Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Large items of equipment were being cleaned in the 2 compartment sink with detergent only.
Corrective Action: Add an extra step of sanitizing such as heat or bleach water.
