205Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: (CORRECTED DURING INSPECTION) The "HABCO" refrigerator was measured at 10°C. The internal temperatures of the foods stored here (corn dogs and springs rolls) were measured at approx. 9°C.
Corrective Action: The foods were discarded by the operator. The operator said they will contact a repair company to fix the fridge. Until this unit has been repaired and can keep foods at 4°C or less, do not store potentially hazardous foods here. The other refrigerator in the kitchen that is functioning correctly (the "M3" refrigerator) should be used instead.
301Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Knives were being stored in a wooden knife block. The knives were examined, and they were not clean and sanitary.
Corrective Action: The knives need to be cleaned and sanitized before being used again. From now onwards, the knives will need to be stored on a surface or in a container that is easy to clean and sanitize. The wooden knife block should be removed from the premises.
