-Overdue permit fee letter hand delivered to the owner. Ensure that it is paid within 10 business days. -Cooking can only take place underneath the ventilation hood. -Ensure that exposed wood in the kitchen is painted within 2 weeks. All coolers were < 4 C. All freezers were < -18 C. Hand sinks supplied with hot and cold water, soap and paper towels. No evidence of pests. Dishwasher final rinse cycle reached 71 C at the plate level. General sanitation was satisfactory.
