Hot holding station - middle insert 61 C, right insert 62 C Wiping rags stored in sanitizer reservoirs. Ensure sanitizer is prepared to 100 ppm chlorine, verify with test strip New cooler ordered to replace left front prep. cooler. Food Safety Plan onsite and temperature logs maintained for cold storage units. Ensure copy of Sanitation Plan is also available onsite to train staff. Ensure temperature logs are maintained for cold storage, hot holding equipment and cooking verification.
