- Block/ seal any gaps or holes that may be potential entry points. Consult with your pest control service technician.

Observation: - Thorough cleaning required in the following areas:
- Grease and food debris accumulation between under equipment and on floor between gas burners (x4) and side prep table.
- Grease and food debris accumulation no floor and side of equipment/ walk-in coolers beside gas burners (x2)
- Grease accumulation on wall behind fryers.
- Grease and food debris accumulation on floor/ wall edges under all 3 flat top grills.
Corrective Action(s): - Thoroughly clean the above noted areas and all other surfaces and hard to reach areas.

- Cook Line Undercounter Freezer not in use at time of inspection. No objections.

- Food storage practices appear satisfactory. Storage is organized and food is protected from contamination.
- Dipper wells in use in service area.

- QUATS is no longer used. EcoLab Sink and Surface Cleaner Sanitizer dispenser has been installed - active ingredients: Lactic Acid and Dodecylbenzenesulfonic Acid (DDBSA)
- Test strips available to verify sanitizer concentration.
- Sanitizer concentration from dispenser: 0.55 ounce/ gallon (700 ppm DDBSA, 1875 ppm Lactic Acid)
- Service area wiping cloths stored in Ecolab Sink and Surface Cleaner Sanitizer.
- High Temperature Sanitizing Dishwasher: 71.6C at dish surface. Final Rinse Temperature Gauge Reading: >82C
- No rodent droppings observed in the kitchen or food storage areas. Regular pest control services provided by a pest control company.
- Valid Permit to Operate posted.
