Observation (CORRECTED DURING INSPECTION): 1. No bleach sanitizer is made at time of visit (visit at 2:30pm). A bucket with water is observed under sink and operator indicated he is in the process of making a new sanitizer bucket.
2. Discussed manual dishwashing procedures with operator - hot water with sanitizer is indicated, but no bleach sanitizer is noted in sanitizing sink nor observed staff using sanitizer as their last step.
Corrective Action(s): 1. Bleach sanitizer must be made available first thing in the morning.
2. Follow proper manual dishwashing procedures: a) wash in hot soapy water; b) rinse in clean hot water; c) soak in sanitizer for 2 minutes; d) air dry.

Observation: 1. Food buckets (ie. oil) are observed storing on ground.
2. A "Home Depot" bucket is noted inside single door stand up cooler. A layer of oil is noted inside the bucket.
Corrective Action(s): 1. Food buckets must be stored at least 6 inches above ground to facilitate cleaning and for pest montitoring.
2. Food grade containers must be used to store food. Remove "Home Depot" bucket from facility.

Observation: Rodent droppings are noted in area next to dishwashing sinks. Operator has contact a pest control company for a visit and visit will happen this week.
Corrective Action(s): Remove droppings and sanitize areas.
