-Premises maintained in a sanitary condition.
-Liquid soap and paper towel present at handwashing stations and in staff washroom. *Ensure paper towel is loaded into dispenser in staff washroom.
-Walk-in cooler was at 3C
-Coolers in front service area were 4C or colder with the exception of the small under counter smoothie cooler which was 6-7C. Cooler was adjusted at the time of the inspection and temperature dropped.
-Walk-in freezer was -13C
-Hot holding of soups was >>60C
-Hot holding of chicken was 63C
-Quats sanitizer (200ppm) available from dispenser at the 3 compartment sink.
-Wiping cloths stored in quats sanitizer solution
-In use utensils stored in ice water.
-High temperature dishwasher met required sanitizing temperature. Final rinse was 73.9C at the dish surface measured with min/max thermometer
-No signs of pest activity noted at the time of the inspection. Pest Control contract in place.
*Ensure any spills in garbage room are cleaned up immediately to prevent pest froms being attracted. Noted small holes at the base of the wall in the corner of the garbage room and small gap under doorway. Hole should be filled and door sweep placed on the door that opens from the mall. Discuss with mall management.
