Follow-up inspection conducted for inspection report# KLAI-CKKTGC
Hot hold unit was holding food well above 70C during the inspection.
10 ppm chlorine residual detected in the chlorine sanitizer container noted on the prep line. **Issue corrected at the time of inspection** Chef increased the chlorine concentration. 200 ppm chlorine residual was detected after the issue was corrected.
No improper scoop was noted in the bulk condiment containers during the inspection.
All light fixtures noted protected with proper shields.
Did not observe food being stored in improper containers/ boxes.
Screen door noted properly fitted.
Significant improvement noted on the cleanliness of the facility. However, still note some mouse droppings in the following areas:
Floor below the shelves in the dry storage room (racks behind the door).
Top of dishwashing machine.
Improvement noted on the cleanliness of the shelves in the walk-in cooler. Only minor debris noted.
Back of house handwash sink not leaking anymore.

Still observed dried on food soil on the handle and back of the meat slicer during the inspection. Spoke to operator regarding this issue and the importance of keeping this equipment clean. Operator dissembled and cleaned and sanitized the meat slicer during the inspection.

No further follow-up required at this time.
