Observation: - Sanitizing buckets or Spray bottle Sanitizer were not provided for Sanitizing food Contact Surfaces.
* Wiping clothes abandoned on food Contact table without Sanitizing.
* Three Compartment dishwashing Sink had no prepped sanitizer therein, Operator Observed washing dishes without Sanitizing. Operator lacked basic knowledge for setting up three Compartment dishwasher.
Corrective Action(s): - Set up sanitizing buckets with appropriate Sanitizing Concentration of 100ppm bleach solution
* Have wiping clothes fully immersed in bucket Sanitizer when not in use.
* Have three compartment Sink Set up in appropriate order prior to dishwashing cycle.
NOTE: - Three Compartment sink dishwashing Signage reviewed with Operator.

Observation: - Food items were observed stored directly on the floor in dry storage area
* Ice Sink Observed open when not in use.
Corrective Action(s): - Have all food items stored six inches off the floor in dry storage area
* The ice machine & ice sink covered with lids when not in use to prevent Contamination of ice therein.

Follow Up to "Critical" Violations Noted on Previous Inspections (if applicable): No corrections entered
Comments

This inspection done by EHO student.


* The following Cold holding temperatures were measured:
- Two-door under counter cooler 2.0 deg.C
- Under counter freezer -15.4 deg.C
- One-door standup cooler 1.0 deg.C

* No hot holding equipment noted in facility.
* Health permit posted in a Conspicuous manner
* Hot & Cold running water available at handwashing stations, with liquid Soap and paper towel stacked up.
* General Sanitation is Satisfactory
* No signs of pest activity noted at the time of visit
* Perishable Condiments at room temperature prepared, served & discarded within a window of 3 hours

NOTE: - Operator re-educated to allow Condiments at room temperature for only 2 hour window period.

COVID-19 PROTOCOL
* Alcohol based hand Sanitizer noted at customer order/pay point.
* Two kitchen staff present at the time of inspection observed with face mask on.
--> However, dinning tables were observed Set up in it's pre-Covid manner, no plexi glass or social distancing measure observed in food premise.
To this effect, a closure order is issued, to have operator develop a Covid-19 Safety plan immediately. A copy of the plan should be Submitted to district health inspector for review and a follow-up inspection will be Scheduled.

The above named Premise is not to be re-opened for business until a Covid-19 Safety plan is developed, reviewed by district health inspector and a follow-up inspection conducted.
