Observation (CORRECTED DURING INSPECTION): QUATs sanitizer buckets measured below 100ppm. Operator informed that it is changed every 4 hours. Operator informed that in-use utensils are washed once a day.
Corrective Action(s): Prepare QUATs sanitizer buckets to measure at 200ppm. Change QUATs sanitizer bucket ever 1-2 hours or when solution is soiled which ever is lesser. Clean and sanitize in-use utensils every 2 hours.

Observation (CORRECTED DURING INSPECTION): Handwashing sinks observed to lack paper towels in the paper towel dispenser. Back handwashing sink soap dispenser cover is broken.
Corrective Action(s): Ensure all handwashing sinks are well equipped with hot and cold running water, liquid soap, and paper towels.

Observation: Excessive grease and food observed underneath the deep fryer area. Marinated sauce from raw meat marination observed along the walk-in cooler handle and along the walls in the walk-in cooler. Built-up syrup observed underneath the fountain drink machine.
Corrective Action(s): Clean and sanitize the aforementioned areas. Review and follow facility's Sanitation Plan on daily cleaning and sanitiation of premises. Corrected by: November 2, 2022.

Observation: Soap dispenser in the back handwashing sink observed to have cover detached. Walk-in freezer measured at -6C air ambient temperature.

QUATs dispenser measured at 200ppm. 3-compartment sink available for ware washing.
Prep cooler and walk-in cooler measured at 4C or lower. Stand-up freezer measured at -18C. Gravy and mash potato hot-holding unit measured at 60C or higher.
Ice scoop observed to be stored outside of ice machine.
Observed staff to record temperatures and daily checklist at the time of inspection.

Sanitation of facility and hand hygiene is not satisfactory. Observed lack of handwashing and daily cleanliness around hard to reach areas, walls, ceiling, and floors.

NOTE: Ensure all staff's FOODSAFE Level 1 certification is on-site for validation.
