Observation: Table-top green onion shredder/slicing machine was observed to be dirty and had not yet been in use today. Staff onsite did not know how to disassemble the machine for proper cleaning and sanitizing.
Corrective Action(s): All equipment must be thoroughly cleaned and sanitized after each use or at least every 4 hours if in use continuously.
Ensure staff are properly trained on how to clean and sanitize all equipment. Do not use this machine until it has been properly cleaned and sanitized.

Observation: 1) Floors under/behind cooking equipment have significant accumulation of grease/food debris.
2) Ventilation hood and filters require cleaning and sanitizing
3) Mop bucket was storing dirty mop water from yesterday.
Corrective Action(s): 1) Ensure deep cleaning of floors in all hard-to-reach areas is completed at least once a week.
2) Clean and sanitize the ventilation hood and filters more frequently.
3) Always empty your mop bucket after use, and store upside-down to allow bucket to properly dry.

Observation: Back area being used for food preparation. This area has not been approved for food preparation, as there is no easily accessible hand sink.
Corrective Action(s): Do not use the back area for food preparation. If you wish to do so, submit updated floor plans for the addition of a hand washing sink to be installed in the back area.

Observation: Both employees onsite at time of inspection did not have FoodSafe level 1 (or equivalent).
Corrective Action(s): At any time during operation, there must be at least one employee onsite who holds a valid FoodSafe level 1 certificate or equivalent. Regular staff to register for FoodSafe course by next week, and complete within 1 month.

- No hot-holding onsite
- Food storage practices satisfactory.

- No signs of pest activity noted at time of inspection.
