Observation (CORRECTED DURING INSPECTION): Two students were observed using their phones, followed by handling utensils and dishware without proper handwashing.
Corrective Action(s): All students must adhere to good hand hygiene practices and hands must be washed where they are contamination to prevent potential cross contamination. Students washed their hands at the time of inspection. Review with all students proper hand hygiene and handwashing practices.

Observation: Dry ingredient scoops were stored with the handle in contact with the ingredients.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -20C.
-Display cooler was at 2C.
-Under counter coolers are used for storage of equipment and not potentially hazardous foods.
-Hot holding was greater than 60C. Foods are cooked to greater than 71C prior to hot holding.
-High temperature dishwasher had a final rinse of 71C on the dish surface (minimum of 71C required for proper sanitizing).
-Quats sanitizer spray bottles were at 200ppm.
-Handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Slicer is properly disassembled for washing and sanitizing in the dishwasher.
-Equipment was clean and well maintained.
-Ice machine was clean and sanitary. Ice scoop stored in a sanitary manner.
-Foods stored off the ground and covered.
-General sanitation satisfactory at the time of inspection. Ensure additional cleaning of shelving units in the walk-in cooler are carried out.
-Facility is serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until October 31, 2025.
