Observation: Area behind dough mixer requires cleaning. Operator explains that it is a hard to reach area, and is difficult to clean.
Corrective Action(s): Ensure area is cleaned by the end of the day. Hard-to-reach areas should be cleaned more frequently. Maintain a schedule for these areas to avoid build-up of debris and dust.

Overall, premises maintained in a sanitary manner

-Hand wash station is fully equipped with liquid soap, paper towels, and running hot/cold water.
-Walk-in cooler and prep cooler are both at 4C. One prep cooler was shut-off and being used as dry storage (bread and sauces).
-Trunk freezer and stand display are at -18C and storage is satisfactory
-Ice cream freezer not being used at the time. Only open during summer season.
-Dry storage is satisfactory
-3 compartment sink is being used appropriately. Bleach sanitizer available
-Both spray bottle and sanitizer bucket containing chlorine solution are at 100ppm Chlorine
-Fume hoods are clean for both fryer area and pizza oven
-No signs of pest activity. UV fly trap is installed.
-FOODSAFE level 1 staff on-site
