Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods from the walk-in cooler was measured >4C (diced tomatoes 5.6C, salami 5.8C, milk 6C). Ambient air temperature measured at 5.8C. Products relocated to a working cooler.

Observation (CORRECTED DURING INSPECTION): Pizza slices in the hot holding unit was measured at 46.1-47.8C internally. Ambient air temperature of the hot holding unit was measured at 48.6C. Pizza in temperature danger zone was discarded at this time.

Observation (CORRECTED DURING INSPECTION): The access to the hand washing station was obstructed by a chair and two stools by placing in front of the hand washing sink. Obstruction removed at this time.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer was measured >200 ppm chlorine, which resulted in bleaching out the test paper. 200 ppm chlorine sanitizer was prepared at this time.

Observation: Small amount of rodent droppings noted throughout the facility, mainly by the hot water tank and behind the chest freezer area.
Corrective Action(s): Remove rodent droppings. Soak droppings with 100-200 ppm chlorine for 10-15 minutes before picking them up with a paper towels. Do not vacuum. Prepare pest control reports for review by next follow up inspection. Correct this by: Jan 4, 203

Observation: The walk in cooler's ambient air temperature was measured at 5.8C. No temperature logs are available to confirm the temperature of the walk in cooler in the morning or last few days.
