Observation: Some food in the walk-in cooler (e.g. salad, sauces) were stored uncovered.
Corrective Action(s): Place a lid/ cover/ plastic wrap over all food that is not in active use (not used for the lunch/ dinner rush). Cover all food to prevent accidental contamination of food while in storage.

Observation: Mouse droppings noted in multiple places in the facility. Mouse droppings were noted in all areas cited for cleanliness issue in violation 306.
Corrective Action(s): Sweep, clean and sanitize all areas noted with mouse droppings.
Operator must locate the latest pest control report for district Health Inspector to review - either by email or have available during the follow-up visit in two weeks.
Continue to work with your pest control company to address pest issue.

Observation: Debris, grease buildup and mouse droppings noted in the following areas:
- Floor beside grill top in the cooking area.
- Floor beside the 2-door non-functioning cooler across from the dishwasher.
- Floor below the dishwasher.
- Floor in the dry storage room below the bulk bin containers and beside the stand mixer in this room.
Corrective Action(s): Deep clean the abovementioned areas - Sweep, clean and sanitize these areas. Maintain the cleanliness as per your Sanitation Plan after completing the deep cleaning.

Observation: Operator is not onsite at the time of inspection. No other staff has been certified with FOODSAFE level 1 or equivalent.
Corrective Action(s): Operator must email certificate/ proof of FOODSAFE course completion to the district Health Inspector within one month. At least one other staff must complete FOODSAFE level 1 or equivalent. Operator must also schedule staff to ensure at least one staff at all time must be certified.

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
No food was being held hot at the time of inspection.
Proper dispensers used for bulk bin containers - all noted with a handle. None were observed being improperly stored with the handle in contact with food.
Sink & Surface Cleaner Sanitizer solution setup in two containers - concentration satisfactory.
Low temperature dish machine was detected with 50 PPM chlorine residual.
