Observation (CORRECTED DURING INSPECTION): Right undercounter cooler was at 13 deg C ambient air temp. Only condiments such as ketchup, mayo, salad dressings were stored in and range between 13-14 deg C surface temp. Internal temp of Jam from the cooler at 14 deg C

Corrective action: A bottle of mayo sauce and a jug of ranch sauce were discarded by the operator
Other shelf stable and low risk food items such as ketchup, Jams, vinegar based salad dressings can remain

Observation: Several fruit flies noted near the prep sink inside dry storage room and near mop sink. Moisture and debris from the prep sink and mop sink may resulted harbouring and breeding of fruit flies.

-left under counter cooler: 2 deg C
-under counter cooler in coffee room: 4 deg C
-chest freezer: -21 deg C
-upright black refrigerator: Top freezer section: -18 deg C
Bottom cooler section: 3 deg C
-upright white cooler: 3 deg C
-pest control serviced by Toodaloo pest and Wildlife service Ltd. once per month
-sanitizer in spray bottle : 200ppm QUATS
-->operator stated sanitizer solutions are being replaced daily
-Sanitizer from the dispenser: 200ppm QUATS.
-General sanitation satisfactory
-Fume hood is clean and no grease build-up. operator stated fume hood is being manually cleaned once per week
-permit posted on wall
- High temp dishwasher reach 71.4 deg C on the plate level
-staff on duty has Valid FoodSafe level 1 Certificate
-Food items in dry storage room are all on shelves at least 6 in (15 cm) from floor.
