Observation (CORRECTED DURING INSPECTION): The following cold potentially hazardous food (PHF) product were stored in the prep insert cooler with internal temperatures greater than 4 deg C (ranging from 7-11 deg C):
- Grilled pork
- Raw beef slices
- Cooked beef slices
- Meat balls
- Tripe
- Eggs
Corrective Action(s): - Cold PHFs that had an internal temperature greater than 4 deg C and were stored in the cooler unit for greater than 2 hours were discarded by staff (grilled pork, raw beef slices, cooked beef slices, meat balls, tripe, eggs)
- Cold PHFs that had an internal temperatures at 4 deg C and were stored in the cooler unit for less than 2 hours were moved to the working walk-in cooler unit that registered at or below 4 deg C (grilled chicken, cooked salmon, cooked prawns)
