Monitoring logs being maintained Walk in freezer at <-18c. Old ice build up has been removed. Walk in cooler at <-4c New meat slicer installed. Slicer observed to be clean. Flashlight on site to verify cleaning. Quat sanitizer dispensed at 200ppm Dishwasher at 77c (At plate level). Soap dispensed into wash cycle.
