General Observations:
Upright kitchen cooler temperature was 2 degC
Upright kitchen freezer temperature was -15 degC but foods in the freezer were frozen to the touch.
Hand sink was fully equipped.
200ppm chlorine was available for use in a spray bottle
Dishwasher rinse was 73 degC at the plate level
Foods in the cooler are covered; raw meats are thawed on the bottom shelf.
Orkin pest control is on a monthly contract. December's report reviewed. No concerns noted.
The Chef had FS level 1 equivalent certification
