Observation (CORRECTED DURING INSPECTION): Due to leaking issue at the main handwashing station in kitchen, staff has been using the prep sink for handwashing and liquid soap/paper towels available at he dishwashing sink on the other side. New liquid pump soap and paper towels to be placed at the prep sink until the faucet for the main handwashing station is replaced.
Corrective Action(s): Ensure to have all handwashing station adequately supplied with liquid soap, paper towels and hot/cold running water at all times.

Observation: Few areas require better and more frequent cleaning.
1) Front area - around coffee machines
2) Dry storage room at front
3) Back storage room
Corrective Action(s): Ensure the mentioned areas are cleaned and organized in a more sanitary manner.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Sink faucet for the main handwashing station leaking. Operator had already purchased a new faucet, but waiting for a technician to come and replace it.
Corrective Action(s): Ensure to have the faucet replaced.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): One of the spray bottles labelled as 'sanitizer' had 0ppm chlorine measured. Staff had refilled the bottle with 200ppm chlorine at this time.
Corrective Action(s): Ensure to have all sanitizer spray bottles filled with 200ppm chlorine solution. Change the solution on a regular basis - 2 weeks.

Comments

Routine inspection conducted:

-Coolers operating below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-Temperature monitoring system in place but temperatures are not recorded anymore.
-Low temperature dishwasher achieved the minimum level of chlorine (50ppm) at plate level after finial rinse.
-200ppm chlorine solution available in labelled spray bottles.
-Tools/equipment maintained in sanitary condition.
-General food storage practice satisfactory throughout.
-No evidence of pest activity observed at this time.

NOTE: Ventilation canopy hood to be serviced for professional cleaning next Tuesday.
NOTE: Faucet for the main handawshing station to be replaced before the weekend.

General sanitation of the kitchen satisfactory. However, improvement is required for the front and back storage areas as mentioned at this time as well as on this report.
