*Hand wash stations equipped with liquid soap and paper towels.
*QUATS sanitizer @ 200 ppm.
*Temperature check:
-Walk-in cooler @ 1-3 deg C; walk-in freezer @ -18 deg C or colder.
-Other coolers were @ 3-7 deg C (end of lunch rush).
-Hot holding for sauce, bacon, soups was above 60 deg C.
-Temperature log was well maintained.
*Dishwasher (low temp.) had chlorine sanitizer residual of >50 ppm.
*Glassware washer chlorine sanitizer residual also >50 ppm.
*Bar coolers were @ 1-2 deg C.
*All food items in the cooler were covered and dated.
