Observation (CORRECTED DURING INSPECTION): Knives observed stored in space between prep cooler and counter. Knives removed at time of inspection. Ensure that knives are not stored in this space as it cannot be effectively cleaned and sanitized. Owner is considering installing a magnetic knife strip.

Routine inspection conducted:

- Prep cooler at 5 degrees C (above) and 3 degrees C (below). Monitor temperatures to ensure top inserts reach 4 degrees C or less. Probe thermometer on site.
- Dessert cooler at 4 degrees C
- Reach in cooler at 3 degrees C
- Reach in freezer at -18 degrees C or less.
- Thermometers available for coolers
- Hot holding soup internal temperature at greater than 60 degrees C
- High temperature dishwasher measured 74 degrees C at utensil surface during final rinse (minimum 71 degrees C)
- Hand washing station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Wiping cloths stored in bleach water sanitizer at 100 ppm chlorine.
- Temperature records available. Reminder to keep up to date and to record observed temperatures rather than checking off boxes.
- No evidence of pest activity noted
