Observation: Drink cooler was operating at 10 degrees Celsius.

Corrective Action(s): Adjust thermostat or service the cooler to ensure it is capable of storing foods at 4 degrees Celsius or less. Do not use this cooler to store milk unless the cooler is operating at 4 degrees Celsius or less. Operator said service technician has been called and will be onsite by 4pm today. Operator moved the milk to a different cooler.

Observation: Mouse and rat droppings found on shelves
Corrective Action(s): Clean up the mouse and rat droppings on the shelves in the back room and on the shelf in the front service area. Droppings were not observed any where else. Please use the live traps to monitor for mouse activity. Discussed with operator about the use of live traps.

Observation: Back room is disorganized.
Corrective Action(s): Organize the back room and remove anything that is not needed for the business. Store all food products at least 6 inches off of the floor.

2. Ceiling tiles are broken/water damaged.

Corrective Action(s): 1. Make sure double sink drains water properly as it serves as the hand washing station for the front service area.

Comments

General observations:
All other coolers were 4 degrees Celsius or less. The deli cooler to the right of the cash register was about 7 degrees Celsius. Discussed with operator to have the service technician check this cooler as well to ensure it is working properly.
Freezers were -18 degrees Celsius or less.
Coolers and freezers were equipped with thermometers..
Food storage practices were satisfactory.
Hand wash stations stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Food handler hygiene appeared satisfactory.
Bleach sanitizer (for cutting knife) was over 200ppm chlorine. Discussed with operator about adjusting the concentration to 100ppm chlorine by only adding in half the amount of chlorine bleach to the volume of water they normally use. Also discussed with operator about keeping the wiping cloth in the bleach sanitizer when not in use.
Chemicals are stored in a safe manner.
