Observation (CORRECTED DURING INSPECTION): 1. Observation: Cloths found on food contact surfaces used without sanitizer.
Correction: Operator must have cloths submerged in at least 100 ppm chlorine to prevent the spread of pathogenic bacteria.
2. Observation: One sanitizer spray bottle noted at over 200 ppm chlorine.
Correction: Operator is to maintain all sanitizers at 100 ppm chlorine. Single-use cloths are to be used once only. Bleach solution can be made using 1 tsp chlorine with 1 L water.

Correction: Operator is to cover all foods to prevent contamination.
2. Observation: A bin of rice was left uncovered in the dishwashing area.
Correction: Operator is to keep all dry storage covered to prevent contamination and the harborage of pests.
