Observation: Large pots of stock/sauces were still not covered. These were stored in walk-in cooler and kitchen area.

Follow-up inspection conducted:

-The operator has obtained a new cooler, which was set up across from the prep sink.
-All coolers now have working thermometers.
-Reviewed thawing procedures with operator and confirmed that foods were being thawed in the cooler or under cold running water.
-Light bulbs have been replaced.
-Rice scoop was left in lukewarm water during inspection, but operator stated the water was replaced with cold water every hour. Operator was told to replace water with ice water during inspection.
