Observation: The following areas require attention:
1)fume hood compartments were found to be covered in dust and grease
2)Hard to reach areas behind the stove and fryers were found covered in grease and food debris
Corrective Action(s): 1) remove the compartments and clean and sanitize before replacing them. Service is scheduled for April 6, 2022 for the entire fume hood
2)Clean and sanitize the specified area. Ensure these areas are cleaned more frequently to avoid build-up

Observation: Left faucet of one of the handsinks is not working. Staff are using the other two sinks at the moment.

Routine inspection conducted alongside the head chef

-2 of 3 handwash stations are fully equipped with liquid soap, paper towels, and running hot/cold water. See violation*
-All coolers (walk-in and prep) are at or below 4C
-Walk-in freezer is at -18C
-Dry storage is satisfactory - Ensure all scoops have a handle and are stored in a manner that prevents contamination
-Low temperature chlorine dishwasher achieves 50ppm
-Bleach sanitizer in spray bottle achieves 200ppm
-No signs of pest activity
