* Bleach sanitizer was too strong. Use only 1 tablespoon bleach per litre of water to make 200 ppm chlorine bleach solution. Walk-in cooler registered: 2 degrees C. upright freezer < -18 C. High temperature dishwasher reached 75.9 degrees C at the plate surface during final rinse. Temperature logs are up to date. Ensure to monitor and record dishwasher final rinse temp for each day it is used. No evidence of pest(s) noticed at the time of inspection. General sanitation is satisfactory Fume hood was found to be clean.
