Observation (CORRECTED DURING INSPECTION): Spinach sauce made at 1100 was at 30C (1430).
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogen and or the formation of toxins. This can be accomplished using mixing wands/stirring or cooling using shallow containers. Item was discarded at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Upright freezer was at -18C.
-Cleaning and sanitizing carried out in 2 compartment sink. Bleach and sink plugs available. Sink was not prepared today - facility was closed for 4 weeks and did not have any catering orders; minimum amounts of food on-site today.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail properly labelled and tested at 100ppm to 200ppm.
-Potato cutter was clean and sanitary.
-Canned food items in the front storage cabinets were in good condition at the time of inspection.
-Facility serviced by a professional pest control operator on a monthly contract. No signs of pests noted at the time of inspection.
-General sanitation good at the time of inspection.
-Operator has purchased sealed wooden shelving to replace unfinished wood - surfaces to be smooth, non-absorbent, and easily cleanable.
