Observation (CORRECTED DURING INSPECTION): Both hand washing stations (one at double sink for coffee prep staff and one at sandwich prep area) do have paper towels.
Corrective Action(s): Paper towels provided during inspection at both hand sinks. Store in dispensers.

304 - Premises not free of pests [s. 26(a)]
Observation: Monitoring traps (2 of 3 checked during inspection) show evidence of mouse activity. Droppings also noted.
Corrective Action(s): Pest control contract must be in place.
1. Immediately make sure all food is protected from contamination (discard any food that is contaminated).
2. Clean and sanititize all work surfaces at start of shift and throughout day.
3. Remove any unneeded items so that there is no areas where pests may nest.
4. Seal all holes where pests may enter.
5. Continue with monitoring for pests.
6. Provide copy of your latest pest control reports to Fraser Health. Follow advice of licenced pest control.

Observation: Building has holes /gaps where pests may enter.
Corrective Action(s): Check under all doors and install door sweeps. Seal all gaps and holes where pests may enter.

Observation: Flour and food on floor is attracting and providing food for pests. Mouse droppings noted in several areas of bakery.
Corrective Action(s): Deep clean bakery and follow a written, routine cleaning schedule.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Commercial dishwasher is still leaking water (bus pan under dishwasher is almost overflowing). This is providing a water source for pests.
Corrective Action(s): This has been mentioned during previous inspections. Repair dishwasher water leak by May 1, 2023 or sooner to avoid attracting pests.

Comments

Routine check.
Coolers - Walk in cooler, sandwich prep cooler, large 2 door by sandwich prep area, under counter/server area, large 2 door by double sink - are at 4C/ 40F or colder.
Check accuracy of thermometers and replace if indicating thermometer is broken.
Hot holding - both soups at 60C/ 140F. Heating soups quickly to 74C/ 165F (not checked today).
Hot food cooled with ice water bath/ice wand. Cool from 60-20 in 2 hours or less and from 20-4C in 4 hours or less.
***Keep temperature records.
Frozen foods are thawing in cooler at 4C or colder.
Walk in freezer and other freezers - ok.
No menu items with raw eggs (no custards or chocolate mousse with raw eggs).
Produce is to be washed in cleaned and sanitized sink or use pre-washed /ready-to-eat produce.
***Note: Ingredient information - accurate ingredient information to be available for all food items delivered off site to other L'Aromas locations.
Check with Canadian Food Inspection Agency (CFIA) for labelling requirements.
Keep batch/lot information for food delivered to other locations for traceability.
Food Safe training - Operator or if operator is absent, at least one person per shift is to have a valid Food Safe level 1 (or equivalent) certificate. Person on site has Food Safety training - ok.
Hand washing stations - see above
***Note: The hand washing sink for staff making hot and cold beverages and dispensing soup and baked goods is to be accessible for use. A sink closer to the front service area is recommended.
Quats sanitizer is available. No solution made during inspection. Make up solution as per label.
Commercial dishwasher - has a final sanitizing rinse of 82C/ 180F shown on the final rinse gauge and 71C/ 160F measured inside of the machine (temperature test strip changed colour) - good.
Dishwasher is leaking - see above.
Cleaning - see above.
Pest control - see above.
