307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): 5 small garbage bags were used for storing raw chicken in walk in freezer. Garbage bag is not made of an acceptable food grade material and can seep toxic chemicals into the food which may result in potential food contamination. All 5 garbage bags with raw chicken were discarded by staff during inspection.
Corrective Action(s): Please use food contact surfaces/utensils made of smooth, impervious, easy to clean, non-toxic and acceptable food grade material for storing any food products.

Observation (CORRECTED DURING INSPECTION): 1 spatula was found worn out from the sides and had uneven broken edges that were breaking into pieces upon touching. These small pieces could break down during food handling and may cause potential physical contamination of food. Staff discarded the spatula during inspection.
Corrective Action(s): Please ensure that all food contact surfaces are maintained in good working order at all times.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of walk in cooler recorded at 4C
- Walk in freezer at -15C
- Stainless steel cooler at 3.1C
- Hot holding unit recorded above 60C
- Temperature logs were maintained and found up-to-date.

Storage:
- All food items were stored at least 6" off the floor.
- Storage room was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- DDBSA and lactic acid based sanitizer in sanitizing pail and sanitizer dispenser recorded within the acceptable concentration range = 700ppm DDBSA and 1875ppm lactic acid
- High temp mechanical dishwasher reached 72.8C on plate level during rinse cycle.
- Utensils and tongs were found in sanitary condition.
- General sanitation of the facility was satisfactory.
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FOODSAFE Level 1.
