Observation (CORRECTED DURING INSPECTION): Rice scoop observed stored in room temperature water during inspection. Staff was not able to verfiy how frequently the rice scoop was changed. Rice scoop was changed during inspection.
Corrective Action(s): Change the rice scoop stored at room temperature and the container with water storing the rice scoop every 4 hours (maximum) to prevent bacteral growth and cross-contamination to the rice. Alternatively, store the rice scoop in ice water throughout the day to prevet bacterial growth.

Observation (CORRECTED DURING INSPECTION): Four knives observed stored in a container with food debris. Staff moved the knives to the dishwashing area to be washed and sanitized.
Corrective Action(s): Do not store used, dirty utensils or dishware. Ensure all dishes are cleaned and sanitized using the high-temperature dishwasher and air-dried before they are stored to be used for food preparation.

Observation (CORRECTED DURING INSPECTION): Raw eggs observed stored above cooked noodles in the walk-in cooler. Staff moved the eggs to the lower shelf during inspection.
Corrective Action(s): Store all raw eggs and raw meat away on bottom shelves and/or away from ready-to-eat foods to prevent potential contamination.

- Hot-holding units measured at or above 60'C
- Temperature logs are maintained - good!
- All food observed covered and stored at least 6 inches off the floor
- General sanitation of facility is satisfactory during inspection
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured 76'C at plate surface (above minimum required final rinse temperature of 71'C)
- Bleach sanitizer in spray bottle and in pail with wiping cloth measured at 200 ppm chlorine concentration with test strip
- Ventilation hood kept in good sanitary condition
- No signs of pests during inspection
- Washroom observed in sanitary condition
