Observation (CORRECTED DURING INSPECTION): Prep cooler by the warewashing area temperatures ranged from 6C to 10C.
Corrective Action(s): Cold potentially hazardous foods must be maintained at or below 4C to prevent the growth of pathogens and or the formation of toxins. Facility can either service the cooler unit so that it functions properly or use time as a control measure for food safety. Time must be documented when the food was placed on the line, and after 2 hours, the food must be used up or discarded. Facility will begin to use time tracking as a control measure.

Observation (CORRECTED DURING INSPECTION): Hair was found in a insert of ranch dressing on the prep line.
Corrective Action(s): Ensure all staff suitably confine their hair to prevent potential contamination of foods. Ranch dressing was discarded at the time of inspection.

Observation: walk-in cooler is missing the light shield.
Corrective Action(s): Ensure all light fixtures have a shatter shield to prevent potential broken glass contamination of foods. New light shield has been ordered and will arrive in approximately 2 weeks.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Prep cooler (away from warewashing area) was at 4C.
-Under counter coolers were at 4C.
-Hamburger patty cooler was at 4C.
-Upright freezer was at -18C (new freezer unit).
-Frosty hoppers were less than 4C. Hoppers disinfected with chlorine based disinfectant.
-Hot holding was greater than 60C.
-Chicken strips and nuggets are time tracked and discarded after 30 minutes.
-Hamburger patties were cooked to greater than 71C on the grill.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizing solution was tested at 200ppm.
-Sanitizer pails tested at 200ppm. Sanitizing solution is changed every hour.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Vegetable slicer/cutter generally found to be clean and sanitary.
-Ice machine clean and sanitary. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the floor, covered, and protected from potential contamination. Raw meats stored below ready-to-eat foods and frozen foods thawed in the walk-in cooler.
-General sanitation good at the time of inspection.
-Facility serviced monthly by a professional pest control operation. Last report (Nov 28) indicates no pest activity inside the store. No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Staff have FoodSafe Level 1 equivalent training (Restaurant Canada National Food Safety Training Program). Expired December 01, 2019. Staff are scheduled to recertify December 02, 2019.
