Observation (CORRECTED DURING INSPECTION): In use (wet) wiping cloths kept on counter and not in sanitizer solution. No sanitizer residual on cloths.

Note: Foodhandling staff aware of and following process to wash, rinse and sanitize surfaces; however, were not keeping in use cloths in sanitizer solution.
Corrective Action(s): Keep in use wiping cloths in bucket of sanitizer solution to control microbial growth. Replace sanitizer solution as required to ensure concentration of solution is maintained at required level. Use test strips to verify.

Comments

- Sanitation of kitchen was satisfactory. An improvement in sanitation continues to be noted.
- Handsinks were supplied with hot and cold running water liquid soap and paper towel
Temperatures checked:
- Walk-in cooler was at 1C
- Walk-in freezer was -10C
- Food in walk-in cooler was stored in a safe manner - covered, dated. Raw meats stored beneath ready to eat items.
- High temperature dishwasher was operational and met sanitizing rinse temperature. Temperature at dish surface was 75.1C.
- Records:
- Cooler and freezer temperatures are monitored twice daily. Records present and up to date.
- Dishwasher wash and rinse temperatures are monitored and recorded three times daily. Records present and are mostly complete with a few entries missed. Continue to ensure dishwasher wash and rinse temperatures are consistently monitored and recorded at the frequency specified in your sanitation procedures.
- Ice machine appeared clean and maintained.
- Quats sanitizer present from dispensers at warewashing sinks. Concentration was 200ppm.
- Dry storage room organized with food products stored on shelving. Majority of dry goods are stored in pest proof containers. Ensure lids to containers are tightly closed.
- Pest control contract is in place with weekly service. Log in place to record if any pest activity is observed. No rodent droppings observed at time of inspection.

Note: Minor damage noted to painted surface of wall in dry storage room. Ensure surfaces are repaired/maintained in good repair with smooth washable finish.
