Cooling procedures discussed with staff. Ice wand available for cooling food prepared in advance. All coolers were < 4 C. Freezers were < -18 C. No evidence of pests, traps are in place. Dishwasher final rinse temperature reached 77 C at the plate. Records available for dishwashing and refrigeration temperatures. Quats sanitizer was at 200 ppm. Sanitizer bucket and spray bottles available. Hand sink was supplied with hot and cold water, soap and paper towels. General sanitation was satisfactory.
