Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Mechanical dishwasher has no sanitizer detected. Sanitizer available in jug but does not appear to be pumped into unit.
Detergent line appears to not be dispensing into unit - line later was noted to be crushed by detergent jug. Once jug was lifted and line freed, detergent began to dispense into unit.
Correction: Ensure dishwasher is functioning properly and is able to sanitize dishware in the final rinse at 50-100 ppm chlorine.

Operator has called unit in for service and will be adding a manual sanitizing step in 1 compartment of 3 comp sink noted at 50 ppm chlorine. Ensure dishwashing staff are aware of the critical sanitizing step and dishware is manually sanitized until dishwasher unit is functioning properly.

Contact Fraser Health once unit is operational again.

Follow-up inspection to report #ZDER-C4QUMQ, all violations have been corrected.
-Mechanical dishwasher noted 100 ppm chlorine at the dish after final rinse
-All cardboard liners have been removed from shelves
-No food prep or thawing observed in janitor slop sink. Operator will thaw food in walk in cooler or in prep sink in future.
-All food has been removed from electrical room and placed in dry storage area, covered, off the ground and organized
