Observation: There were some flies present. No UV light present/on or another means to reduce fly population. Garage door at back was left open for delivery. Flies are pests and may carry disease causing organisms that can contaminate food and food contact surfaces.
Corrective Action(s): Reduce the number of flies present. Keep doors and windows closed. Monitor the premises for pests on a regular basis.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray was in a bottle labelled as "Windex". Improperly labelled chemicals may cause mis-use and contamination of foods or food contact surfaces.
Corrective Action(s): Store chemicals such as cleaner, sanitizers and detergents in clearly labelled containers.

Comments

- Bleach sanitizer spray had too much chlorine (200ppm ++) concentration. It bleached the test strip. Too much bleach (over 200ppm) requires surfaces to be rinsed with water after application to remove the excess residual.
*to make 100ppm of chlorine sanitizing solution, use 30ml (1 tablespoon) of 5% unscented bleach per 4.5 litres (1 gallon) of water
- High temperature dishwasher reached 79.8C at the plate level upon final rinse cycle
- Meat slicers were clean
- All coolers were at 4C or less (except the Coldstream, which was not holding potentially hazardous foods).
- All freezers were at -18C or less
- Items were in good repair (utensils, etc)
- Premises was in good, sanitary condition
- Foods were covered and off the ground to protect from contamination
- Handsinks had hot water, liquid soap and paper towel
- Coolers/freezers had thermometers present
- Permit was posted
- Foodsafe certified staff present
