Follow up to Rpt # MBEK-B24S2F

- Display cooler ambient temperature was measured at 2 degrees C
- Wiping cloths are stored in quats sanitizer solution available at front and back at 200 ppm
- In use utensils (e.g. knives) are being stored in an ice bath
- Hand washing stations are supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Single use containers/utensils were not observed to be in use for food storage
- Chicken was observed to be cooling in a more shallow insert container in the walk in cooler. Reminder to cool in thin layers to minimize cooling time. Check internal temperature of food to ensure it is cooling from 60 degrees C to 20 degrees C within 2 hours, and 20 degrees C to 4 degrees C within 4 hours.
