Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: *REPEATED VIOLATION*
1. Vegetable dicer had dried up food debris build-up that could habour bacteria and can cause potential food contamination.
2. QUATS sanitizer pail was available on site. The concentration of QUATS was measured at 0ppm. Operator prepared fresh sanitizing solution and QUATS concentration was noted at 200ppm.
Correction: 1. Ensure that any food debries is scraped off from vegetable dicer prior to washing and sanitizing the equipment.
TO BE CORRECTED BY - Immediately
2. It is recommended to prepare 200ppm QUATS sanitizer fresh everyday to minimize the risk of inadequate sanitizing food contact surfaces.

Observation: *REPEATED VIOLATION*
QUATS sanitizer solution in the small plastic container used for sanitizing step during manual dishwashing was recorded at 0ppm. Staff onsite stated that the solution is changed every 2-3 days. Proper manual dishwashing was discussed during last routine and follow up inspection but not being followed. The container used for sanitizing step is too small to accomodate and adeqautely sanitize all the utensils/dishes/food contact surfaces used for facility operation.
Correction: Ensure that all food contact surfaces/utensils/dishes are adequately washed and sanitized. Use 2 compartment sink for manual dishwashing by following proper steps - wash & rinse, sanitize and air dry.
It is recommended to prepare the sanitizing solution fresh every day or as needed and have test strips on site to verify the concentration.

Follow up inspection conducted to routine inspection.

- 200ppm QUATS sanitizer spray bottle available. The concentration was verified using test strips.
- Operator stated that the sanitizer solution is prepared every day.
- Operator demonstrated proper steps for manual dishwashing in 2 compartment sink. 200ppm QUATS sanitizer solution is prepared in 2nd sink following manufacturer's instructions - 50ml QUATS in 10L water or 5ml QUATS per Litre of water.
- Drain plug available onsite.
- Dead mouse has been removed from the facility.
- Operator mentioned that Pest Control Company has been made aware of the issue and a routine check is scheduled for tomorrow.
