301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Two ice machines (kitchen and bar area) observed with an accumulation of biofilms and stains on the interior.
Corrective Action(s): Clean and sanitize the aforementioned ice machine. Discard the current batch of ice and the first batch after sanitizing the machine. Ensure to follow your sanitation plan for regular cleaning schedule. Correct by: Immediately.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. One bucket of quats sanitizer near the deli slicer measured with a concentration of less than 50 ppm. Other stations did not have any food sanitizer available for use.
2. High temperature dishwasher registered 68-69C at plate level during the final rinse cycle. At least 71C is required to properly sanitize plates and utensils.
Corrective Action(s): 1. Fill the sanitizer buckets with 200-400 ppm quats sanitizer from the dispenser. Clean and sanitize all food contact surfaces with the newly prepared sanitizer.
2. Set up manual dishwashing at the 2 compartment sink. Staff may use the dishwasher for wash and rinse but must manually sanitize all utensils and equipment.

Observation (CORRECTED DURING INSPECTION): Window was opened near the deli slicer prep table without any screen in place.
Corrective Action(s): Install a screen at the aforementioned window. Alternatively, do not open windows.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Accumulation of food debris observed on the blinds close to the prep table where the deli slicer was stored.
2. Stains and food debris observed on the tray used to store cutting boards inside the dry storage area.
Corrective Action(s): Clean and sanitize the aforementioned area. Follow your sanitation plan for regular cleaning schedule. Correct by: June 3, 2022.

- Freezers (walk-in, chest) were functional.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 2 compartment available for manual dishwashing.
- Temperature records maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed at the time.
- Adjust the walk-in and coldstream cooler temperature to ensure they can adjust to 4C at a faster rate.
- Dining is limited to single-use plates and utensils until dishwasher is serviced.
