- Premises is a meat processing plant. Premises cuts beef and pork, repackages chicken and receives/ships lamb.
- Soap, paper towel, hot and cold running water available at two compartment sink in the refrigerated processing room
- Quat sanitizer at source and in spray bottle 200ppm. Test strips available.
- Reviewed manual warewashing procedures at time of inspection - no concerns. 2 drain plugs available.
- Most equipment is clean in place (ie. band saw, grinder...etc). Operator said the equipment is taken apart, washed and sanitized after each use and when the meats are changed (ie. to avoid cross contamination)
- Refrigerated repackaging room 6C
- Walk in cooler 2C, Walk in freezers -19C and -21C, Deep freezer -26C
- No unpackaged foods handled in shipping area (gloves and sanitizer used)
- General sanitation satisfactory. No obvious signs of pest activity. Operator has contract with pest control company (comes in monthly). Follow all recommendations made by pest control technician.
