Observation: - Rodent droppings observed in the following areas:
- Floor/ wall edges under freezer, oven, and handsink.
- Under 3-compartment sink.
- On and around grease trap.
- On metal cart racks (where dry ingredient bins are stored).
- Main gate storage area.
- Small flies noted around 3-compartment sink area (between sanitizing sink and cooler).
Corrective Action(s): - Remove droppings and clean above noted areas.
- Use 100-200 ppm chlorine bleach solution (1 tsp chlorine bleach + 1 L water) on affected areas.
- Continue to monitor for pest activity. Report new and/ or increased activity to your pest control service technician.

- Proper handwashing practices observed at time of inspection.
- Cooler: 3C
- Freezer: -14C (Food products are maintained in a frozen state).
- Baking temperature log and Display Management System (DMS) Log appear maintained and up-to-date.
- 200 ppm QUATS available.
- Manual 3-compartment sink dishwashing and sanitizing method in practice. 200 ppm QUATS used for sanitizing step.
- QUATS test paper available for verifying sanitizer concentration.

- Appears that pest activity has improved since the last inspection (less activity). Pest control services are provided monthly by a pest control management company. Continue to follow all recommendations provided by your pest control service technician. Continue to apply exclusion techniques (e.g. additional gate to block front entrance to mall during when premises is closed).
