DQ Bakes FSP received from headoffice. Reviewed plan with the operator. Chicken tenders will not be on site (raw product). Chicken breasts arrive frozen and are thawed in the cooler. The product is then cooked in the microwave until an internal temperature of 165F is reached (checked with a probe thermometer). The product is then put in a hot holding unit (measuring 140F or greater), and served per order. Cooler unit for toppings measured 38F - good Lettuce and tomatoes are cut on site, all other products come pre-prepared. Correction order rescinded for DQ Bakes items. Products are permitted for service. Products permitted: chicken bacon ranch sandwich, turkey BLT, grilled chicken sandwich, chicken quesadilla, buffalo chicken wrap, chicken bacon BBQ wrap, funnel cake, fudge stuffed cookie, apple tart, and triple chocolate brownie.
