- Hand washing sinks were properly supplied with hot/cold running water, liquid soap, and paper towels.
- Quat-based sanitizer solution available at 200 - 400 ppm from dispenser and in sanitizer pails, used appropriately/as per manufacturer's instructions on label. Test strips available for monitoring.
- Triple-sink for manual warewashing maintained in sanitary conditions. Sink drain plugs available and sinks were set up properly for manual warewashing.
- Both prep coolers and walk-in cooler measured at 4C or colder.
- Walk-in freezer measured at -18C or colder.
- Hot-held meatballs and soup measured at 60C or hotter.
- Accurate thermometers available. Temperature logs available.
- Good food storage practices noted. All food stored off the floor, covered and protected from contamination.
- Proper thawing methods observed at time of inspection (in walk-in cooler).
