205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Broth is brought into the main kitchen from the stove in the second kitchen and kept out at room temperature to be used in making various dishes. The broth temperature was 20 degC and it had been out for over 2 hours.
Corrective Action(s): Discard the broth. The broth is to be kept above 60 degC or below 4 degC. You can bring out small amounts and keep it on the stove at 60 degC or higher.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cooked chicken and pork were stored on a sheet pan on top of the inserts inside the hot holding unit. The bottom part of the hotholding unit was turned off. The air temperature inside the unit read 50 degC on operator's thermometer. The probed temperature of the chicken was 47 degC and the pork was at 45 degC. Upon questioning, the operator indicated that the cooked meats had been in the unit since noon (over 2 hours).
Corrective Action(s): The chicken and pork were discarded. This is a repeat offence. Violation ticket issued for this offence.

Observation (CORRECTED DURING INSPECTION): Some of the rice containers are still not being washed after each use. During the inspection, there were about 5 used rice container stored with the clean ones.
Corrective Action(s): This is a repeat offence. Rice containers must be washed and sanitized in the dishwasher after use Every SINGLE TIME. It is unacceptable to use an already used container to serve rice to another customer without having washed the container in between! Violation ticket issued for this offence.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) During the inspection, we observed a staff member using his hand to remove pork from the hotholding unit to serve to a customer without washing his hands.

2) Foods in the coolers are not covered. Also, raw meats/fish are stored above vegetables.

3) There are no scoops in the brown sugar, salt, cornstarch, bean and rice containers.
Corrective Action(s): 1) This is not acceptable. Employees must wash hands before handling food and use tongs to dispense foods whenever possible.

2) Cover all foods in the coolers. Store raw meats/fish under vegetables.

3) Buy scoops for the dry storage bins

Observation: Cockroaches observed on a sticky trap under the stoves.
Corrective Action(s): Ensure that the pest control company is also treating for cockroaches. It appears that they're only treating for rodents currently.

Observation: General sanitation is poor. A thorough cleaning is required.
Corrective Action(s): Clean the exhaust hoods, under the stoves, clean the inside floor and walls of the back walk-in cooler.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Sliding door cooler by the ice machine in the main kitchen was at 10 degC. Operator mentioned that the vents were frozen this morning. Thermostat was adjusted during the inspection, but this cooler isn't working properly.
Corrective Action(s): All PHF's were discarded. Get the cooler fixed. Don't store any PHF's in this cooler until it's fixed and can maintain a temperature of 4 degC or below.
