Observation (CORRECTED DURING INSPECTION): No quaternary ammonium compounds (quats) sanitizer was detected in any of the sanitizer containers that were tested. No sanitizer was detected from the sanitizer dispenser. The sanitizer concentrate container was observed to be empty.
Corrective Action(s): Staff on site stated that no sanitizer concentrate refills were available for the dispensing unit and that a shipment was expected to arrive tomorrow. A jug of quats concentrate was available on site. Staff prepared sanitizing solutions manually and verified with test strips available on site. Solutions were measured at 200 ppm quats. Ensure that sanitizer is always available at the correct concentration for effective sanitizing. Ensure that sanitizing solutions are being tested as per your sanitation plan.

Observation (CORRECTED DURING INSPECTION): 1. Raw beef patties were stored directly above mustard, pickle, and margarine buckets in walk in cooler. Buckets were covered with lids.
2. Disposable cups were observed inside multiple dry food storage containers.
3. Dry storage food items stored among cleaning products in dry storage area. All items were observed to be covered with lids or packaged.

Routine inspection conducted:

- Walk in cooler at 1 degree C
- Tenders cooler at 4 degrees C (above) and 1 degree C (below)
- Assembly cooler at 3 degrees C (above) and 4 degrees C (below)
- Fry/onion ring cooler at 5 degrees C. A plastic insert cover was observed to be completely obstructing cooler fan--cover was removed by staff.
- Left under counter cooler (black) at 2 degrees C
- Right under counter cooler (silver) at 3 degree C
- Cooler drawers at 1 to 4 degrees C
- Walk in freezer at -20 degrees C
- Ice cream freezer at -14 degrees C. Ice cream freezer in use at time of inspection.
- Hot holding internal temperatures at 60 degrees C or more
- Cold holding units equipped with thermometers accurate to 1 degree C
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed properly washing hands before putting on gloves.
- Dipper well functional
- Utensils and equipment maintained in sanitary condition
- Low temperature dishwasher measured 31 degrees C and 50 to 100 ppm chlorine in the rinse residual at the utensil surface
- No signs of pest activity observed
- FOODSAFE certificate produced by staff on site is valid to 2022.
- Washrooms in clean condition
