Observation (CORRECTED DURING INSPECTION): - Bleach Sanitizer in spray bottle only tested 10ppm. The owner stated the bleach solution has been changed every 2-3 days.
Corrective Action(s): - Instruction given to how make 100-200ppm bleach to sanitize the contact surfaces.
- Please effectively use bleach sanitizer on all food contact surfaces frequently.

Observation (CORRECTED DURING INSPECTION): - In the upright cooler, eggs pack and chicken containers placed on the top of shrimp.
Corrective Action(s): - Raw eggs and chicken should be stored below seafood and beef.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: - Low temperature dishwasher chlorine tested 0ppm at the time of inspection.
- The wastewater tank connected with the dishwasher was leaking.
- Hand sink in front service area lack of cold water supply and hand soap.
Corrective Action(s): - Repair the dishwasher to ensure the chlorine concentration at least 50ppm at the dish level.
- Use 3-compartment sink to wash, rinse and sanitize the kitchenware until the dishwasher is in good working order with health inspector's approval.
- Repair the front hand sink to make sure it is equipped with hand soap, paper towel and hot/cold running water.

Comments

Routine inspection conducted with the presence of the owner and 2 other staff.

- Hand washing sink at the back fully equipped with hot and cold running water, liquid soap, and paper towel. However, the front one was not adequate. See Code.
- Upright cooler, prep cooler, beverage cooler, under the counter cooler all at 4C or below.
- Upright freezers -18C.
- Rice cooker measured at 75C. Staff stated that rice spoon was cleaned and sanitized every 2 hours.
- Sauce holder at the front by the grill was in a sanitary condition - Excellent!
- Sanitation of the floor underneath the equipment and the tables was satisfactory.
- Staff onsite has valid FOOD SAFE training certificate.
- No signs of pests observed.

Note: (1) Please call district health inspector if you have any questions.
(2) Clean can opener daily.
(3) Make bleach solution daily.
(4) Either thoroughly clean the electric fan, or replace it in the front kitchen.
(5) Wash hands frequently.
(6) Clean the uniform frequently.
