Observation (CORRECTED DURING INSPECTION): A deep container of cooked chicken cutlets was observed to be stored at ambient temperature. Note: Internal food temperature: approximately 60 degrees C.
Corrective Action(s): Chicken cutlets were placed into shallow containers and transferred to a cooler at 4 degrees C or less at time of inspection. Ensure foods are properly cooled from 60 degrees C to 20 degrees C within 2 hours, then 20 degrees C to 4 degrees C within 4 hours to limit the growth of potential pathogens. Ensure effective methods are used to facilitate rapid cooling (e.g. using shallow pans).

Observation: 1. A brown buildup was observed on some parts of the ice machine interior.
2. What appeared to be food debris was observed on parts of turning vegetable slicer.
Corrective Action(s): Turning vegetable slicer placed into dishwashing area to be washed and sanitized at time of inspection.
Discard ice and ensure ice machine interior components are properly cleaned and sanitized. Date to be corrected by: Today.

Observation: 1. Mesh bag of onions stored on floor.
2. An approximately one to two inch piece of plastic/paper observed within dry rice bin. Paper/plastic appeared to be a part of the seam of a bag.
3. Storage of takeout containers (in bags/boxes) observed in staff washroom.
Corrective Action(s): 1. Onions removed from floor. Ensure all food is stored off the floor to protect from potential contamination and to allow for proper cleaning.
2. Piece of plastic/paper removed from rice bin. Ensure appropriate measures are taken to protect food from potential contamination.
3. Ensure above-noted items are removed from staff washroom. Date to be corrected by: Today.

Bleach water sanitizer available at 100 to 200 ppm chlorine in containers located in front and back areas.
High temperature dishwasher measured 74 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C at the utensil surface).
No signs of pest activity observed at time of inspection.
Shellfish tags kept on site.
Temperature records maintained.
