306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) Mould build-up found in the food walk-in-cooler on the ceiling and cooler fan covers. Mould could fall into food and contaminate it.
2) Rodent droppings found behind the bar ice machine (under the stairs) and on the floor and low shelves in the upstairs dry storage area. Rodent droppings carry diseases.
Corrective Action(s):
1) Wash the walls and ceiling of the food walk-in-cooler, and the fan covers to remove the mould. Increase the frequency this is done, to prevent the accumulation of dust.
2) Clean up the rodent droppings and sanitize any surface that came into contact with the droppings. Droppings must be cleaned up every day to prevent illness, and it is a good way to monitor the activity areas and levels of rodents.

501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
Observation:
There was no staff present, during the inspection, who possessed a valid FoodSafe level 1 certificate.
Corrective Action(s):
Immediately have staff enroll into the next available course (in class or online), successfully complete the course and obtain a certificate. There must be one staff member, present during operating hours, that possesses a valid FoodSafe certificate.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation:
Owner/supervisor does not hold a valid FoodSafe level 1 certificate. This is needed, so the owner/supervisor is able to train/direct staff in the safe and correct way to process & store food.
Corrective Action(s):
Immediately enroll into the next available course (in class or online) and successfully complete the course, and obtain a certificate. Forward a copy of the certificate to our office for our records.
