306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) Mould build-up found in the food walk-in-cooler on the ceiling and cooler fan covers. Mould could fall into food and contaminate it.
2) Rodent droppings found behind the bar ice machine (under the stairs) and on the floor and low shelves in the upstairs dry storage area. Rodent droppings carry diseases.
Corrective Action(s):
1) Wash the walls and ceiling of the food walk-in-cooler, and the fan covers to remove the mould. Increase the frequency this is done, to prevent the accumulation of dust.
2) Clean up the rodent droppings and sanitize any surface that came into contact with the droppings. Droppings must be cleaned up every day to prevent illness, and it is a good way to monitor the activity areas and levels of rodents.

Observation:
There was no staff present, during the inspection, who possessed a valid FoodSafe level 1 certificate.
Corrective Action(s):
Immediately have staff enroll into the next available course (in class or online), successfully complete the course and obtain a certificate. There must be one staff member, present during operating hours, that possesses a valid FoodSafe certificate.

Observation:
Owner/supervisor does not hold a valid FoodSafe level 1 certificate. This is needed, so the owner/supervisor is able to train/direct staff in the safe and correct way to process & store food.
Corrective Action(s):
Immediately enroll into the next available course (in class or online) and successfully complete the course, and obtain a certificate. Forward a copy of the certificate to our office for our records.

Comments

Routine inspection completed:
- Handwashing stations stocked with hot/cold water, liquid soap and paper towel.
- Coolers <4C or colder, freezers <-18 or colder, thermometers present; and temps recorded daily.
- Sanitizer solution for growlers consists of acetic acid, para-acetic acid, and hydrogen peroxide solution. This is used to clean all the lines and kegs in the brewery.
- Glasswasher had [Cl2] between 50-100ppm strength. Test strips present.
- 3 compartment sink for manual warewashing shared with the brewery. Bleach present for sanitizing step.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO followed.
- Minimal mice droppings found in upstairs, food storage area. Professional pest company (Orkin) contracted to monitor and eliminate pests. Snap traps and tin cans found in high activity areas. No flies/fruit flies observed.
- General sanitation level is good.
- Ice machine is clean.
- Valid health permit and decal posted.
